Wepa! One of my all time favorite Puerto Rican dishes to make is pastelón, a casserole version of the Puerto Rican pastel that we love to eat during holidays.

Many people call pastelón a Puerto Rican lasagna, but our version is more like a shepherd’s pie, made with plantains, stewed meat, spinach and topped off with mashed yuca.
